Sweet Potato Breakfast Smoothie
If you love a good smoothie but fancy something different, try this delicious sweet potato smoothie recipe. When you are thinking about smoothies you don’t tend to think about sweet potato too often but this tasty little number will flick the switch on what you can create a delicious smoothie out of.
We got this tasty little number from our friends over at paleobreakfast.com who have inspired me to create this smoothie on more than one occasion.
Even though it’s a smoothie I tend to make it in the Autumn and Winter, maybe I associate sweet potato with a hot hearty meal, however, this little smoothie will fuel your body up nicely and something you can enjoy all year round.
Remember, you prepare this recipe the night before, as in you cook the sweet potato the night before and let it rest overnight, read on for the full scope.
Sweet Potato Smoothie Ingredients
- 1 Sweet Potato
- 1 Banana
- 1 Cup of ice
- 1 Cup of almond milk
- 1/2 teaspoon of cinnamon
Sweet Potato Cooking Method
Once you have checked your ingredients, preheat your oven to 400 degrees F which is around 200 degrees C. Wash and clean the sweet potato well and place it on a baking sheet ready for the oven.
Bake the potato in a preheated oven for around 40 to 45 minutes, or until the sweet potato can be pierced with a fork fairly easily so you can tell if it is cooked through.
Remove from your oven then place on a resting try to cool, once your potato is cooled, place the sweet potato in an airtight container and pop in the refrigerator overnight.
In the morning simply cut the potato open and scoop out the nice and soft potato. Measure around ¼ of a cup and reserve the rest for tomorrow’s breakfast. You can either have sweet potato smoothie again and or, try some sweet potato pancakes or more smoothies!
Add the sweet potato, banana, almond milk and ice into your blender and let the mayhem commence, stop your machine after a short blast and add the cinnamon, blend again. When your mixture has been blended sufficiently pour and serve right away for a nice cool sweet potato breakfast smoothie blast!.
