Clean Eating Christmas Cake Recipe

This particular clean eating paleo cake recipe was kindly provided by Nicola Smith over at the foreverfit.tv who have surely prepared one of the tastiest christmas cakes I have ever tasted. I was surprised how easy it was to put together, the only downside is having to wait overnight for the recipe to set correctly! – Its a rather tempting cake!
Paleo Clean Eating Christmas Cake Ingredients
3 cups of mixed dried Fruit ( I used raisins, dates, sultanas and apricots)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
zest and juice from 1 orange
3 tablespoons olive oil
2 cups ground almonds
1 cup hazelnuts
Clean Eating Christmas Cake Cooking Instructions
After you have checked your ingredients, line a 20cm cake tin (or similar size), include the sides.
Preheat your oven to 150 C, which is around 300 F, make sure you properly preheat the oven.
Chop up and dice your dried apricots and dates into small small pieces. In a large bowl place dried fruit, spice, vanilla, orange zest plus the juice.
Add the olive oil and eggs, mix it together till a nice consistency. Add in the almonds and hazelnuts then mix it all through.
Pour your batter into your cake tin, then bake for around 90 minutes until a skewer comes out clean. Remove from the oven, and cool for around 20 minutes then pop in the fridge overnight (I know…).
