When you have checked all your ingredients it is time to make your paleo burritos. Use a large frying pan, give it an even spray with coconut oil.
Heat your pan over a medium heat for a few minutes to get the pan ready for your delicious burrito mix.
Grab your regular mixing bowl, gently whisk your eggs together, add a generous pinch of salt and pepper.
Cut the white part of the green onion, dice it up fairly fine and add to your egg mix. For our UK readers the green onion is your version of the “spring onion”. Once you have diced up the white part of the onion don’t forget to keep the green parts for garnish, don’t throw them away.
Add the mixture to the hot pan, then cooking over medium heat. Keep stirring your mixture every so oven, just like you would with a normal scrambled eggs recipe, basically, until the eggs are completely scrambled and cooked through. This usually take about 5 min.
To complete the recipe, you can either add the cooked eggs mixture into your paleo wraps then garnish with the green part of the onion, tomato, avocado, cilantro, salsa, cheese, and lime if desired, then roll your burritos.
Or, as a flexible recipe, before you serve you could pop your paleo burritos under a hot grill for a few minutes to get some crisp into the recipe, then serve, or you can even leave off the garnish and place on top of the burrito or just serve without garnish, it’s up to you how you enjoy your paleo burritos.
