Ingredients To Make The Angel Cake
- 12 large egg whites
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon Celtic sea salt
- 1 1/4 teaspoons cream of tartar
- 1 tablespoon pure vanilla extract
- 3/4 cup maple or coconut sugar
- 1 cup arrowroot flour
- 1 1/2 cups heavy cream, whipped (or whipped coconut cream for Paleo)
- 1 pint berries (optional)
Angel Cake Cooking Instructions
Once you have checked and arranged all of your ingredients, start to preheat your oven to 350ºF which is around 180ºC.
Place the egg whites and your lemon juice into a standard mixing bowl, then whisk the egg mixture on a medium to high until they turn foamy, this should only take about 30 seconds.
You can then add a pinch of salt, add the cream of tartar and the vanilla, then start to whisk the mixture on medium to high speed until soft peaks form, this should take you about 1-2 minutes.
Again, with the mixer on medium to high speed, slowly add 1/2 cup of the maple sugar or coconut sugar, only add them at 1 tablespoon at a time.
Sift the remaining 1/4 cup maple sugar and arrowroot flour into a bowl. Place your mixer on a medium setting then slowly add the arrowroot mixture. Slowly crank up the speed up to medium/high and whip away until smooth.
Pour your batter into a clean 12-cup angel food cake pan, then bake for around 40-45 minutes until the cake is puffed, and the top of the cake is just turning a nice golden brown color.
You can then remove the cake from the oven, carefully and gently turn the cake upside-down, and place it on the top of a can, don’t forget to cool it completely which will take roughly about 1 hour.
Then you can run your knife around the outside of the cake and invert onto a cake platter. Then serve your creation by itself and or with some whipped cream and tasty berries.
