Paleo Christmas Eggnog Recipe

Paleo Christmas Eggnog Ingredients
- 1 cup. light coconut milk
- 1 cup. dairy-free milk (such as almond or hemp)
- 3 Teaspoons. coconut sugar
- ⅛ Teaspoons powdered stevia extract
- 3 egg yolks
- 1 Teaspoons. vanilla
- 1 pinch sea salt
- 1 Teaspoons. freshly grated nutmeg
Christmas Eggnog Preparation Instructions
Once you have checked your ingredients list, begin by beating the egg yolks until lighter in color and a velvety texture.
Pour in your sugar and stevia and beat again until the sugar is fully dissolved.
You then combine the milk, sprinkle of salt, then and the nutmeg into your saucepan.
Bring the mixture to a steady boil, don’t forget to gently stir your creation.
When your eggnog has heated to the appropriate temperature, remove it from the heat, and the mixture slowly into the egg/sugar mix, stirring continuously.
Return everything to the pot, stirring continuously, and heat until temperature reaches 160 degrees, or about 1-2 minutes (don’t go longer or it will curdle).
I usually turn off the heat after about 30 – 50 seconds and let the pan sit there for another minute or so while stirring, just to make sure that I don’t ruin it at the end. I then add in the vanilla.
