Christmas Carrotnog Recipe
If you are looking to get into the Christmas spirit and looking for an alternative to eggnog, why not try our slant and have some carrotnog! This carrotnog recipe is a delicious alternative to age old eggnog version.
I must say that I do enjoy this version of the classic eggnog recipe, this version is a little more refreshing and fruity but packs a taste punch. Thanks again to Lauren at the oatmealwithafork.com team. I would never had thought of Christmas carrotnog before as it does put a fresh modern twist on a classic Christmas recipe.
Christmas Carrotnog Ingredients
½ c. coconut milk (I used light)
½ c. almond milk
⅓ c. fresh carrot juice (I got this by juicing 3 carrots)
⅛ t. salt
2-3 t. maple syrup (I liked 2, but a couple of my tasters liked 3)
⅛-1/4 t. nutmeg (freshly ground, if possible…the pre-ground stuff is not as good)
1 T. coconut oil, melted
1½ t. slippery elm, powdered (optional, but it adds to the sweetness and thickness)
Christmas Carrotnog Instructions
Double check all your ingredients are there, then start the fun. Blend everything together until totally mixed.
As soon as you have your mixture ready, pop it in the fridge for a few hours to chill. You can serve it with some shredded carrots, dried coconut, or even some deliciously tasty whipped coconut cream!
