I tried this recipe and my family loved it, it’s funny as this is a paleo recipe but no one would notice the difference or even think it some form of diet recipe. As we know, the truth is Paleo is not a diet, it’s just a healthy way of eating.

Anyway, before I digress into another paleo moment, give this recipe a try, it’s darn right tasty and you can spice it up as much as you would like.

Chipotle Chicken And Lettuce Tacos Ingredients

  • 400g of skinless chicken breast cut into fairly evenly cut thin strips
  • a good splash of olive oil or coconut oil
  • 1 x red onion finely sliced
  • 1 x 400g tin of tomatoes (whole or chopped)
  • 1 T of finely chopped chipotle in adobo sauce (or substitute with finely chopped pickled jalapeno chillies and a pinch of dried chilli flakes)
  • 1/2 t cumin
  • pinch of brown sugar and salt and pepper to season
  • lettuce leaves to make your tacos (I like to use butter lettuce or baby gem lettuce)
  • fresh coriander leaves
  • sliced pickled jalapeno chillies
  • slices of avocado or make a guacamole
  • fresh tomatoes and slices of spring onion to make a rustic salsa
  • salt and pepper
  • lime wedges to spritz

Be sure you check all your ingredients before you dive right in, the recipe is simple to make but don’t scrimp on the ingredients. – Do a double check and get all ingredients out and check them off!.

Chipotle Chicken And Lettuce Tacos Recipe Instructions

Heat the olive oil or coconut oil in a non-stick frying pan, heat it up for a few minutes then quickly fry your chicken pieces until they turn a nice golden color. – Pop them to one side.

Keep hold of the frying pan, as in the same non stick pan, add another small splash of olive oil or coconut oil then fry off your onion until it softens and starts to caramelize.

Pop in your tomatoes, add a good pinch of cumin, brown sugar and chipotle. Then simmer the ingredients for around 15 – 25 minutes or until the tomato sauce starts to thicken.

Pop your chicken back into the delicious sauce and allow it to cook for about another 3-5 minutes.

When done you can add all the elements to make your tasty tacos in separate bowls, you can then serve so it so that every one can get involved and make up their own.

I must say that I like to give the chicken a really good spritz of the lime juice. This really freshens things up and amplifies the flavours in the dish.
